There Just Aren't Enough Hours In The Day

I didn't. Unless you count my 5 a.m. cleaning spree for the playgroup that almost wasn't. (2/3 of the group was sick!) Or all the sex I'm going to have after I publish this and get in bed with my husband.

*I LOVE these things. I got the recipe from one of my competitors in the biggest loser contest I entered last year.

Apple Chicken Salad Pita


Apple Chicken Pita Sanwiches

1 lb. chicken breast
4 medium chopped apples
1 cup chopped celery
1 cup light mayo
1/2 cup sugar-free apricot preserves
pita bread cut in half

Mix all of the ingredients except the pita bread. Refrigerate about an hour. Fill pita and serve.

This made enough to feed the playgroup.
